Cashew Chicken, Broccoli, and Rice

This tastes better than takeout and is one of my 4-year-old's favorite dishes. I usually double the sauce and cook the broccoli (or any vegetable!) in the pan with the chicken in the last stage. I serve over rice with sesame seeds.

Korean Beef

I often substitute turkey, because it's just as good with this sauce. I serve this over rice and in a bowl with zucchini mushrooms sautéed in garlic and a splash of soy sauce.

My kids like to eat this with dried seaweed and make little seaweed tacos.

Lentil Bolognese

This one is super easy, and a very easy way to introduce lentils to your diet if you're not already a huge fan.

I cheat and use Roa's pasta sauce instead of making my own, and it turns out great. Serve with Banza pasta for even more protein.

Peruvian Chicken

This is one of our favorites, and a go-to that I make when we have friends over for dinner.

It's great on the grill for a summer night, but just as good in a cast iron pan on your stovetop.

I roast cauliflower (425 degrees for about 25 minutes, with lots of olive oil and some salt) for the side, and serve with rice.

Creamy Vegetarian Tortilla Soup

This is so good. I make it with chicken bone broth for extra protein, making it no longer vegetarian. But I love having this with the beans and lentils inside! My kids love this with tortilla chips to dip.

My favorite thing about this dish is that is a true 'dump everything in the crock pot and leave it' dish. No browning or sautéing required. And I usually have most of these ingredients on hand.
